Just made this cake for my husband’s birthday :).

What I Loved

  • Deep chocolate flavor.
  • Perfect mousse texture and flavor without being overly sweet.
  • Easy to follow recipe.
  • Great flavor combination.

My Adjustments

  • I used two strong espresso shots in the syrup and still found it a bit too sweet.
  • I also used 200 g of mascarpone for the dark mousse because that’s all I had left, and it worked perfectly without any issues.
  • I used an acetate sheet to help shape the cake and create smooth, clean sides after piping the mousse.
  • I decorated the top by alternating circles of the dark and light mousse, then dragged a toothpick through them to create the pattern.
  • I did the writing on the cake using white almond bark.
  • I would have let the dark chocolate mousse layer fully set in the fridge before adding the light mousse and second cake layer for a cleaner, more defined finish.

Mini mousse shooter cups

A little craft moment

The original recipe was made for a much larger cake, so I ended up with plenty of mousse left over. Instead of letting it go to waste, I turned it into these mini mousse shooter cups with a layer of crushed graham crackers in the middle. They were such a hit, they almost stole the show!

The mousse was my favorite part, absolutely perfect. While I loved the recipe as a whole, I can definitely see myself making just the mousse again and again. My only complaint was the syrup, as I felt it was a bit too sweet and overpowered the sponge. Overall, though, I highly recommend this recipe!
