What I Loved
♡
The tomato paste complemented the soup perfectly.
The soup was rich without being oily.
I liked that it had some viscosity from the potato and noodle starch without the need to add cream.
There was a good balance of protein, vegetables, and carbohydrates.
My Adjustments
↺
I did not use butternut squash, as I did not have it on hand.
I used chicken breast cut into small pieces instead of chicken thighs.
I added more salt to taste at the end of the cooking process.
I used about 5 garlic cloves instead of 2.
I used purple onion instead of yellow, as that is what I had at home.
I garnished with dried parsley instead of fresh.
Last but not least, I added some lime juice right before enjoying it, which was a lovely finishing touch that I highly recommend.

Final Verdict
★★★☆☆
This recipe was perfect for putting together a quick and healthy meal. My husband is not a fan of either Thermomix recipes or soups, but he approved of and enjoyed this one. It is not a recipe that will blow you away, but it is comforting, homey, and tasty. I look forward to trying it again and incorporating the butternut squash.
